Abstract (English)
Hospitals have rising demands on efficiency and effectiveness. Therefore, facility management has an important role to meet these requirements and particularly this is the case for catering services. Because these are one of the most costly non-clinical areas and have a high impact on patient satisfaction. In order to face these challenges, new innovative catering systems are required. One of these is the use of a mobile breakfast trolley on hospital wards instead of centrally prepared breakfast trays. As new systems can influence current catering offers, the research question is: Which changes in the catering process are caused by the new catering system? The applied research design has a mixed-method approach based on a case-study design. The findings show that the order behaviour is different between the new catering system and the current one. Additionally the new system effects high patient satisfaction, less cost of goods per patient as well as almost no production of food waste. Results are showing that innovative solutions from the facility management are needed to face hospitals current challenges. The project results stated that facility management has an important role on image creation as well as costs reduction and efficiency increase in hospitals.
